If you would like to know if this dish can be stored in the fridge, it can. However, you can only store it for up to a maximum of two weeks. After that, we recommend you throw it away. But if this tasty treat is up to your liking, the chance of it being left alone for two weeks is highly unlikely.
When it comes to the type of olive to use, pitted is best. You can use unpitted olives if in a pinch but pitted will let the marinade reach everywhere.
How to Make Them
Ingredients:
- 1/4 cup fresh parsley, finely chopped
- 4 fat cloves of garlic, peeled & thinly sliced
- 1 small orange, peeled into strips
- 1/3 cup extra virgin olive oil
- 1 tbsp red wine vinegar
- 14oz pitted olives
- 1 tsp dried oregano
- 1 tsp dried chili flakes
- Some Feta cheese and slices of toasted Ciabatta to serve on the side
Instructions:
1. In a large dish, whisk the extra virgin olive oil, oregano, red wine vinegar, parsley, and chili flakes (these are optional, so if you don’t want any heat, leave them out). Then, put in the olives, orange peel, and garlic.
2. Cover and marinate at room temperature for an hour. Just remember to toss the mixture every now and then to make sure everything has been mixed properly.
3. Try to marinade for more than an hour if possible. However, leave it in the fridge.
4. Before serving, you need to bring it back to room temperature so the oil has time to loosen up. Then, you can add your feta and slices of ciabatta and enjoy.
