There are many quick ways to cook an amazing dinner, but one of the most satisfying is this quick and easy creamy bacon chicken recipe. It can be made fast and requires just a few main ingredients, meaning that as long as you have chicken, bacon, heavy cream, and dry pasta or rice in your refrigerator and pantry, you are all set.
How to Make It
Ingredients
- 2 chicken breasts
- 6 slices of thick-cut bacon
- 1 tsp of salt
- ¼ cup of all-purpose flour
- ½ tsp of black pepper
- ½ tsp of onion powder
- ½ tsp of garlic powder
- 3 cloves of minced garlic
- 2 tbsp of butter
- 1 diced small onion
- 1 tbsp of olive oil
- 1 cup of heavy cream
- ¾ cup of chicken broth
- 1 tbsp of fresh minced thyme
- grated Parmesan cheese for serving
- salt and pepper to taste
Instructions:
1. The first thing to do is to turn the chicken breasts into thick cutlets. To do that, slice them uniformly and horizontally and pound the thicker ends.
2. Cook the bacon first, whether it is in slices or pre-chopped. Cook it until it gets crispy and the fat is rendered. Make sure to watch out if the bacon starts to burn and reduce the heat if that is the case.
3. Next, it’s time to season the chicken. Use the cutlets you made and season both sides with salt, pepper, and onion & garlic powder. You should then place the pieces into a large ziplock bag with flour and mix everything gently to give the chicken a good coating.
4. Now you’re ready to cook the chicken. Do that in the same pan you used for the bacon, and ensure there are two tablespoons of the bacon grease left there. Cook the chicken for four to six minutes per side.
5. Use olive oil and butter to cook the onions until they soften, and stir in the minced garlic until everything gets fragrant. Add the chicken broth and scrape up any brown bits. Bring to a gentle boil and reduce the heat to medium-low. Stir in the heavy cream and add the bacon and chicken to the pan.
6. Cook everything for five more minutes and remove it from the heat. Season it to taste, and garnish it with Parmesan cheese.
